Pecan Cookies

    • 1 cup butter, softened
    • 1 cup powdered sugar (plus more for rolling)
    • 1 teaspoon vanilla extract
    • ¼ teaspoon salt
    • 2 cups all-purpose flour
    • 1-1/2 cups finely chopped pecansPreheat the solar oven.

Select a cookie sheet that is dark (and will fit in your solar oven). Grease pan. Cream butter, sugar, salt and vanilla.Slowly add flour until a thick dough forms. Stir in pecans. (You may use a stand mixer for this.)

Scoop dough in 1 tablespoon size amounts, roll into balls.  Set on cookie sheet about an inch apart (closer than most cookies, these will not spread).

Bake for about an hour in the solar oven at temperatures above 225 degrees F. The cookies will not brown, but they will be baked and safe to eat.

Remove cookies from oven and roll in powdered sugar while still hot. Set aside to cool. Roll cooled cookies in powdered sugar once more.
